Ingredients:
- 3 ounces thinly sliced prosciutto, cut into 30 long, thin strips
- 30 asparagus spears, trimmed
- 10 (14 x 9 in.) sheets frozen phyllo dough, thawed
- cooking spray, such as Spectrum non-GMO olive oil cooking spray
Instructions:
- Pre-heat oven to 450
- Wrap one strip of prosciutto around the asparagus spear barber pole style
- Place one sheet of phyllo on a work surface (cover remaining sheets to prevent drying out), and spray with cooking oil. Cut crossway into thirds to create 3 rectangles.
- Place a prosciutto-wrapped asparagus spear vertically at the short end of the rectangle, and roll up.
- Arrange rolls on baking sheet, and coat with cooking spray. Repeat process with remaining ingredients.
- Bake for 10 minutes, or until phyllo is golden and crispy. Serve warm or at room temperature.
