Crispy Jerusalem Artichokes | Mama Jean's Natural Market

With all this talk about Gut Health, a lot of us are asking "What foods can we eat to help support a healthy microbiome?" One answer is Jerusalem Artichokes, sometimes called Sunchokes. Jerusalem Artichokes are high in inulin, a prebiotic. Good gut flora, or our microbiome, love inulin! It's a natural fiber that feeds many different types of good bacteria in your gut. This is important because the more diverse your microbiome, the healthier it is.

We've found a simple yet delicious recipe from Bon Appetit's online November 2014 recipe archive. Enjoy!
