These savory appetizer cheese balls have been elevated with goat cheese (chevre) and prosciutto. The cranberries add just a hint of sweetness. Make them for friends and family, and they'll be sure to be a hit!

Ingredients:
- 2/3 cup whole berry cranberry sauce
- 1/3 cup stone ground mustard
- 2 1/2 tsp honey
- 1/4 tsp cayenne pepper
- 2 packages (11 ounces each) fresh goat cheese
- 2 cups dried cranberries, chopped
- 1 tsp fresh rosemary, minced
- 1 tsp fresh thyme, minced
- 3 eggs
- 3/4 cup panko (Japanese) bread crumbs
- 3/4 cup pistachios
- 1/2 pound thinly sliced prosciutto, cut into 1 inch strips
- oil for deep frying
Instructions:
- In a small bowl combine the cranberry sauce, mustard, honey, and cayenne. Set aside.
- In a separate small bowl, combine the goat cheese, cranberries, rosemary, and thyme. Shape into 1 inch balls. Place on baking sheet.
- Whisk eggs in a shallow bowl. In a separate bowl, combine panko bread crumbs and pistashios.
- Dip each ball into the eggs first, then bread crumb mixture. Wrap a slice of prosciutto around the ball and secure with an appetizer skewer.
- In a deep pan or deep fryer, heat oil to 375 degrees. Fry the balls, a few at a time, for 30-60 seconds or until golden brown. Drain on a paper towel.
