Low-Carb Grits, y'all! Craving Southern cooking, and trying to cut back on carbs? This down-home recipe for "grits" is the key! Cook up some shrimp, and you'll have yourself an *almost* traditional Shrimp & Grits dish.

Ingredients:
- 2 medium Cauliflower Heads
- 1 medium onion, diced
- 1 Tbsp. good quality cooking oil
- 1 tsp. Salt
- 1/2 tsp. Pepper
- 2 cloves garlic, minced
- 2 cups Organic Chicken Stock
Instructions:
- Cut cauliflower heads into 1 inch cubes, and place in the bowl of a large food processor
- Process until finely ground, about 1 minute. Texture should resemble corn grits
- Over medium-high heat, place oil, onion, salt & pepper into a medium saucepan
- Saute until onion begins to brown
- Add garlic, chicken stock, and processed cauliflower to pan and stir
- Cover and cook for 10 minutes. Remove lid, and cook for another 10-15 minutes, or until most of the liquid has been absorbed
- Remove from heat, and serve warm!
