Ingredients:
  • 2 medium Cauliflower Heads
  • 1 medium onion, diced
  • 1 Tbsp. good quality cooking oil
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 cloves garlic, minced
  • 2 cups Organic Chicken Stock
Instructions:
  1. Cut cauliflower heads into 1 inch cubes, and place in the bowl of a large food processor
  2. Process until finely ground, about 1 minute. Texture should resemble corn grits
  3. Over medium-high heat, place oil, onion, salt & pepper into a medium saucepan
  4. Saute until onion begins to brown
  5. Add garlic, chicken stock, and processed cauliflower to pan and stir
  6. Cover and cook for 10 minutes. Remove lid, and cook for another 10-15 minutes, or until most of the liquid has been absorbed
  7. Remove from heat, and serve warm!
