Ingredients:
- 2 heaping cups packed dates/raisin
- 1/2 cup honey (substitute agave or maple syrup if desired)
- 1/2 cup Peanut Butter
- 1 cup Almonds, roasted unsalted, loosely chopped
- 1 cup Peanuts, roasted unsalted, loosely chopped
- 4 cups Rolled Oats (substitute gluten free)
- 2 Tbsp Chia Seeds
Instructions:
- Process dates in a food processor until small bits remain (about 1 minute). It should form a "dough" like consistency.
- Place oats, almonds, peanuts and dates in a large mixing bowl - set aside.
- Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
- Once thoroughly mixed, transfer to a 9x13 inch baking dish lined with plastic wrap or parchment paper so the granola bars lift out easily.
- Press mixture down firmly until uniformly flattened.
- Cover with plastic wrap and let firm in fridge or freezer for 20-30 minutes.
- Remove bars from pan and chop into even bars. Store in airtight container for a week or leave in the freezer to keep them extra fresh.
