Adventure Granola Bars | Mama Jean's Natural Market

Ingredients:
  • 2 heaping cups packed dates/raisin
  • 1/2 cup honey (substitute agave or maple syrup if desired)
  • 1/2 cup Peanut Butter
  • 1 cup Almonds, roasted unsalted, loosely chopped
  • 1 cup Peanuts, roasted unsalted, loosely chopped
  • 4 cups Rolled Oats (substitute gluten free)
  • 2 Tbsp Chia Seeds
Instructions:
  1. Process dates in a food processor until small bits remain (about 1 minute). It should form a "dough" like consistency.
  2. Place oats, almonds, peanuts and dates in a large mixing bowl - set aside.
  3. Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
  4. Once thoroughly mixed, transfer to a 9x13 inch baking dish lined with plastic wrap or parchment paper so the granola bars lift out easily.
  5. Press mixture down firmly until uniformly flattened.
  6. Cover with plastic wrap and let firm in fridge or freezer for 20-30 minutes.
  7. Remove bars from pan and chop into even bars. Store in airtight container for a week or leave in the freezer to keep them extra fresh.
